I try to plan out my weeks meals every Monday, that way I only have to go to the grocery store once a week and and I don't have to constantly be thinking of what to make for dinner. My goal is to try to plan 2 weeks at a time, but for now I am doing good to have one weeks worth of meals planned. Trevor's class schedule is weird this semester so it kinda dictates when we eat dinner. He doesn't have class on Wednesday nights so we usually have something a little nicer since we can actually sit down and eat together for more than 10 minutes. On Thursday he has about 5 seconds to eat dinner so I usually try to have some kind of leftovers that I can heat up really fast. I want to try to add my weeks menu on here every Monday. I also want to start trying at least one new recipe every week.
So for this week:
Monday - Hamburgers and fries
Tuesday - Mom's Tortilla Soup
Wednesday - Steak and twice baked potatoes with green beans
Thursday - leftover soup
Friday - we will be at a rehearsal dinner for Josh and Nicki's wedding
Saturday - Wedding
Sunday - we will have an 8 hours drive ahead of us, so I'm thinking we will eat on the road :)
For a breakfasts / snack this week I am going to try a new recipe, Pumpkin Chocolate Chip Muffins! I'll let you know how they turn out!
